Show Us Your Life - Dinner Recipe


I'm finally participating in Kelly's Korner weekly post. I've been meaning to post for a while but just never got around to it. I remember she had a 'show us where you live' topic but every time I'd want to post we'd be in the process of painting, cleaning, moving...whatever.


So, this time it's time to share one of your favorite recipes. Mmm....food. I've decided to post Rusty's Pot Roast recipe, mostly because I don't cook & when I do, it's not very good. Click here to check out the various recipes that are being posted on Kelly's blog.

This recipe is REALLY simple & it's all done in a slow cooker so you can even leave it cooking while you run errands or go to work, Sweet!


Prep time: 10 minutes
Cook time: 10 - 12 hours on low
Servings: 6-8


Ingredients:
1 - (5-6 lb.) pot or rump roast

3 - medium red potatoes (1/4 cut)
3 - carrots (cut in 1/4)
2 - medium red onions (cut in 1/4)
3 - stalks of celery w/leaves (cut into 1-2 inches pieces)
1 - tsp. salt 1/4 - tsp. pepper
1 - bay leaf
3 - beef bouillon cubes

1/2 - cup water
2 - tbs. Worcestershire sauce

Directions:
Peel and cut the potatoes, carrots and onions. Slice the celery stalks. Place half of the vegetables across the bottom of the slow cooker. Rub the salt & pepper completely over roast and place the roast in the slow cooker over vegetables (note: we had to cut the roast in half for it to fit well). Place remaining vegetables around roast and add the bay leaf and bouillon cubes. Pour water and Worcestershire sauce over all the ingredients.

Cover and cook on low setting for 10 to 12 hours (if you want to cook it quicker, put on high for 5 hrs but keep an eye on it). To serve, remove the roast and vegetables to a serving platter. Let the roast cool slightly before slicing because I actually burnt my taste buds off cause I couldn't wait.


FYI:
We use a Hamilton Beach: Stay or Go 6qt. slow cooker & added brown rice as a side to the meal.

  2. I am sooo excited to try this out! I have been trying to find a pot roast recipe for awhile but didn't know if any that I found would be good!! I am definitely trying this soon! Thanks for sharing!

  3. @Passion Fruit: Ha ha...I guess I forgot to hit 'enter' key & it got clumped together with one of the veggies. Thanks for noticing, I would have left it like that otherwise.

    It sort of strange to have a pot roast recipe with no pot roast, lol.

    I too am addicted to Dr Pepper and wear converses!

    I love cooking in my crockpot!! When I worked it was my best friend. Now days mostly just to cook beans or a large venison roast...the same recipe for your beef roast.
