I Laughed So Hard, I Cried

We had dvr'd this a couple of days ago & I just finished watching it a few minutes ago & I can't even begin to explain how FUNNY it was.

I was literally on the bed rolling in laughter & in tears, it was hilarious. I informed Rusty that next time George Lopez in or around O.C. we're going to go see him perform. I don't care how much the tickets are. If you have HBO I totally suggest you search for the next time it's on & watch it. Even if you're not hispanic, you'll love it. Rusty's white (to be PC, he's caucasion) & he was laughing just as much as I was (without the tears).

After watching this I'm totally feeling my mexicanness so I'm off to make Arroz con leche...Yum! Some might know it as Rice Pudding, just without the eggs (me no likey). If you ever want to try this delicious treat here's the recipe.


You'll need the following:
- 1 cup long grain rice
- 1 ½ cup water
- 1-2 cinnamon sticks
- 1 can condensed milk
- 1 can evaporated milk
- 1 cup regular milk
- ground cinnamon
- ½ cup raisins (optional)

Directions:
-In a medium sized pot cook rice in 1½ cups of water with cinnamon sticks over medium heat.
-When most of the water has evaporated, add condensed, evaporated and regular milk and stir gently.
-Stir constantly and keep an eye on it. Milk tends to boil over the minute you turn your back on it. I know because it happens to me every freaking time.
-Cook for about 20 minutes or until rice is tender.
-Take the cinnamon sticks out and stir in raisins if adding them.

-Serve with some ground cinnamon on top.


Note: Arroz con leche thickens when it cools down so make sure to use enough milk. I like to eat mine when it is warm, but you can eat it cold & it's just as good :)
